Apple Pie

Ingredients

Pastry 1 1/2 Cups Four

½ Cup Cornflour

½ tsp Baking Powder

¼ tsp salt

150g Unsalted Butter

½ Cup Caster Sugar

1 Egg Yolk

1-2 Tbsp Iced Water


Filling

6 Granny Smith Apples

½ Cup Sultanas

¾ Cup Sugar

1 Tbsp Flour

¼ tsp Nutmeg

½ tsp Cinnamon


Method

  1. Preheat oven to 190 °C degrees

  2. Slice, peel are core apples, place in bowl with other ingredients ands set aside

  3. Sift together flour, cornflour, baking powder and salt

  4. Rub in butter until the mixture look like bread crumbs

  5. Mix in sugar, then add water and egg yolk

  6. Form into a ball on a floured bench, and chill for 1 hour

  7. Roll out onto bench and place in pie dish. Blind bake for 10 minutes

  8. Add apples and cover with remaining pastry In a latticed pattern, bake at 190 °C for 15 minutes the reduce heat to 160 °C for the remainder of the cooking time. (cook for 45 minutes)

Notes

  • Save egg white for glaze

  • Blind baking refers to placing baking paper over the top of the pastry and weight it down with either beans, rice or baking beads to allow the pastry to remain in the same shape

  • Make sure to dot the pastry for better air flow and an even bake

  • Can be served with cream, ice cream or custard
