Ginger Bread Men Cookies

Serving size 15 cookies

Ingredients

250g Unsalted Butter

1Tbsp Caster Sugar

1 tsp vanilla Essence

1 Cups Flour

½ tsp Salt

¾ Cup Toasted Almond Powder

1 Cup icing sugar

1Tbsp Ground Ginger








Method

  1. Cream butter, sugar and vanilla together until light and fluffy using a stand mixer

  2. Sift flour and salt together and add to the butter

  3. Fold in the almond flour and ginger

  4. Roll out and cut with gingerbread cookie mould place on baking tray and cook at 180 °C for 15-20 minutes

  5. When cooled dust with icing sugar

Note:

  • you can’t buy toasted almond flour therefore you have to toast it yourself in the oven at 160 degrees on a lined baking tray turning the flour every 5 minutes until browned

  • Instead of dusting cookies with icing sugar you can also use white chocolate to create ‘buttons’
