Scallop And Chive Dumplings

Serving size: 20 dumplings
Ingredients: 30g Chives
300g Scallops
2Tbsp Oyster Sauce
1Tbsp Soy Sauce
1 Red Chilli (according to taste)
30 Dumpling wrappers
Method
Dice scallops, add sauces, chives and chilli and cook for 5 minutes or until meat begins to turn white (should still be raw) Remove from pan and let cool
Add a teaspoon of the mixture to the centre of each dumpling wrapper, fold in half and press the sides together
Place dumpling in steamer until cooked
Notes:
prawns or crab are a good substitute for the scallops
Can be served with chilli oil, or soy sauce
These can be made in advance and frozen, then steamed when needed
